Haven't cooked on my Egg in awhile and cant remember, also cant click on or use the search function.

In my opinion, flatirons are too thin to sear/roast/rest. I do them this way:

Never heard of the "flat iron" applied to any kind of steak...is it the same as a London Broil cut ??? Your pix look delish!!

If you live in the east you might have to ask your butcher to cut one for you.It is from the chuck.It should be termed shoulder top blade steak and is cut in a way that eliminates the connective tissue that runs through the center.

Thanks TRex!! I followed your method to a T and it came out perfect!! My Egg has been snowed in up here in Ohio and I haven't cooked in awhile, nothing better than a flatiron on the Egg!!

Its a bit late to say anything but I'd note that the flatiron does really well using Dizzy Pig Red Eye Express.

Thanks for the feedback...live in Albama. The only real butcher is about 60 miles from my place. Next time I go into "town" I'll try to get that cut of meat. Looks great.
