Armadillo eggs on the mini

Used a firebrick for a plate setter. Used pepper jack cheese and Jimmy Dean sausage. Dusted with Hen and Hog Dust. Cherry for the smoke.

That's really neat--they're like bite-sized fatties. Never saw it done that way, but hey--it looks like something the kids would really enjoy (and the grown-ups, too!)

I usually use cheddar and a slice or 2 of jalapeno. I call them mini armadillo eggs. Originally, hollow a jalapeno, stuff with cheddar then wrap with sausage and cook.
