Slow smoking with the place setter

Does anyone use the place setter with rack above while slow smoking? Is there any advantage or disadvangage? Does the smoke build up on the place setter to where I would not want to cook bread or pizza on it? Thanks.[p]Buck

    Buck,
    For slow indirect cooks you place the plate sitter with the legs up and the grate on top of the legs.
    For pizza put the plate sitter in with the legs down and a pizza stone on top of the sitter. The double ceramic does a much better job for pizza and bread, etc.
