Butt Question - Help
Options
OK...i put on a 8lb butt last night and somewhere between 12 and 6 am the fire dropped pretty low. I have it back now but i don't know if the meat will still be ok. I don't think the meat ever got out of the "danger zone" and then fell back into it.
Do you think i should order pizza for my super bowl party of do you think i can save the butt?

I am by no means an expert but I think it will be important to know what "pretty low" was...120? 150? 190?

I believe the rule is...
If the temp is allowed to remain inside the 40° to 140° range for 4 or more hours, the likelyhood of bugs growing is pretty high. What temp was it when you went to bed? What about this morning, when you first checked it? -
When i went to bed i had it on there for only little while so it was around 50...when i got up it was at 109 so it went up but again i don't know if it went up higher and dropped back to 109. have a feeling it didn't i don't think it even came close to the plateau.

Sounds like a toss-it situation, especially with your not knowing what was going on during that 6 hour time frame. Figure out something that you can cook in short order or summon the pizza wagon. I've got short ribs goin' in the slo-cooker and later I'll whip up some ABT's on the Egg (stuffed with cream cheese & smoked salmon). Happy Super Bowl!
