I was just at Catelli Bros. website, where they say one of their veal products is "MAP packaged to extend shelf life to 14 days." Aybody know what MAP packaging is?

    Modified Atmosphere Packaging (MAP)

    Modified-atmosphere packaging (MAP) is used extensively in the food industry as a means of extending shelf life. Typically, air is removed from the space above the food as it is being packed by flushing the package with an inert gas such as carbon dioxide or nitrogen.
