if anyones looking for something different, get a thai cook book, i bought "quick and easy thai" a while back, everything ive cooked from it has been great. and all the dipping sauces, ive tried, fire roasted tomato and chili pepper for the crying tiger, a soy based one for tuna steaks, this sweet chili garlic sauce thats similar to a light jelley, all excellent flavors. these thicken thighs were charred at 650 on the lower grill and then i dropped temps til the internals were about 175, could have gome a few more degrees, but very juicy interior and a charred exterior. the books been an adveture as ive never eaten thai food before, even the simple curry dishes are just overflowing with flavor.
