chicken thighs with sweet chili garlic sauce

if anyones looking for something different, get a thai cook book, i bought "quick and easy thai" a while back, everything ive cooked from it has been great. and all the dipping sauces, ive tried, fire roasted tomato and chili pepper for the crying tiger, a soy based one for tuna steaks, this sweet chili garlic sauce thats similar to a light jelley, all excellent flavors. these thicken thighs were charred at 650 on the lower grill and then i dropped temps til the internals were about 175, could have gome a few more degrees, but very juicy interior and a charred exterior. the books been an adveture as ive never eaten thai food before, even the simple curry dishes are just overflowing with flavor.

i didnt get the pic of the tuna steaks, but these were other cooks, the steak should have been flank, but i made the thin sticks, the chicken called for bone in wings and thighs with skin but thes worked great. most of the dishes are quick cooks which im liking on cold snowy nights.

Another Thai cookbook that I really like is Lemongrass and Limes. Simple easy recipes, with lots of flavor. Pretty healthy also. Food looks Great!

if your sauce is the Thai sweet hot chili sauce, I'd eat it on cardboard.....

this one is a sweet hot chili garlic sauce, easy to make. 1 cup sugar, half cup each water and white vineger, 5 cloves coarse chopped garlic, simmer it down til it starts to thicken, add a heaping tbls chili garlic sauce as it cools down, its like candy.fukahwee maineyou can lead a fish to water but you can not make him drink it
