Just because, I am an hour and a half into smoking a rack of spares @225 dome at top level of my adjustable rig. Mustard and Dizzy Dust coated, I am flipping every 45 minutes and spraying them with 50-50 vinegar / apple juice. I threw a handful of cherry chips on for smoke.
Considering all the 3-2-1 and 3-1-1 recipes out there, and the fact that 225 dome is not that hot, anyone think these will be done in less than eight hours?

Yeah, I'd have to say that the way you're doing them it is likely to take 8 hours. For the first 3 hours, the grate temperature will most likely be about 200, hardly enough to make the ribs tender. Opening the dome that often will slow things down too.
I'd edge up to 250 dome. Later, open the daisy to see when the bones are out 1/4". Then open the lid and baste/turn every 30 - 45 minutes. If the slab is laying flat, the ribs might be done in 5 1/2 - 6 hrs.

I pulled these after about 8 hours direct- they hit only about 185 between the bones, but the meat came clean off of the bones, and the Blues Hog was delicious.
I'll probably stick to indirect from now on, but I was curoius to see what direct was about.
