Double smoked ham! WOW!

Did our first double smoked ham, man that is some good eats. Bought a half bone in smoked ham and simply coated it with a mixture of honey,maple syrup,dijon mustard and pepper. Stabilized egg at 275-300 with inverted plate setter then grate and extended grate.Added one chunk apple wood and let it settle. Cooked until 235 and let rest 15 minutes.
Very good!
We'll save the bone add a couple smoked ham hocks and make the best split pea soup you ever had :)
