Whole smoked salmon

Has anyone done a whole smoked salmon? I am going to pick up a small 4# salmon and wanted to do it whole because of the size. The one question is should I remove the skin over the fillet before I smoke it? If anyone has an idea, please let me know.

  • I would leave the skin on during the smoke. Make a foil stand to keep the salmon open whil you smoke. I think Dr.BBQ has a recipe in one of his books on whole salmon. He even uses pearl onions and something else underneath the salmon to look like a river bed for presentation.
