Thanks for the help on Christmas Eve. The rib roast was superb and the turkey on Christmas Day was just as good as Thanksgiving. My family, who is used to fried turkeys gave me many complements, including "that's the best turkey I've ever had!" This after complaining that I wasn't frying it to begin with.[p]We are home and it's raining so I I decided to fire up the egg and throw on some fatties, I was just looking for something to do. These are my first fatties. I put one regular Jimmy Dean and one large Bob Evans on with my rub that I use for pork butts and briskets. [p]My dog ate one of my probes on the digiq II so I'm just running with pit temp. I'm set at 225. Any idea how long I should wait before I check internal temperature?[p]Thanks,

Mike in MN,[p]I went with 3 hours and was at 165. Had one of them for Breakfast this morning. YUMMY![p]Now if I can just convince SWMBO to let me get that meat grinder......[p]boz.
