Flat Iron Steak.......Best Way To Cook

I have some Flat Iron Steaks, whatever they are. They looked good in the meat case anyway. Is there any special way to prepare and grill these, or just do it like any steak. I don't want to burn them up, or to be tough like leather, so I need some expert advice.

They are great. You can TRex but I just cook at 500 and keep flipping until 135. Cut against the grain.
EVOO/Kosher Salt and Fresh Ground Black Pepper. Set out 1 hour before cooking. Enjoy.[p]Mike

Bob In Texas,[p]Do them however you prefer any other steak.[p]I like to TRex them....others prefer to forgo the rest step with flat irons.[p]Either way, they are addictive and a great steak for the price.[p]There is usually a little sinew left on them, and sometimes they have a pretty thick ribbon that runs through them. You can either cook and eat aroudn that, or trim them off. I usually trim the flat iron before cooking.

</a>"><p />Bob In Texas,[p]These were the first ones I did. I got some smaller ones from Whole Foods and just did the sear part of the TRex cooking method, followed by a rest without a roast. They were too thin to do any more cooking, and they are an excellent cut of meat![p]-Mike[p]

Mine is from Krogers too. I think I'm on the right track. I've about got spoiled with Krogers baby back's. Beautiful ribs, and cook off really nice.

Bob In Texas, have you every noticed the expiration dates on Kroger's vacuum sealed flat irons. It's a lot longer than the other typical wrapped cuts in the cooler. I wonder why? [p]I need to check the bbacks, thanks. T

Jeeves,[p]That was a shot from the first cook I did of a flat iron cut. Those two cuts came from HEB, too, and were a lot better than the ones I got from Whole Foods.[p]Next time I run into some, I'll give you a holler.[p]-Mike[p]
