Cooking Multiple Butts question

So I've read on here that the rule of thumb is 1.5 to 2 hours per lb. Does this mean that a 16 lb pork shoulder would take 32 hours to cook? [p]Has anyone done this? [p]What about doing multiple Butts at once? Do you go by total weight or the weight of each butt? like does two 4lb butts go 16 hours or 8-12? [p]I have noticed that smaller butts seem to take longer than 2 hour rule. [p]thanks for the help. [p]Scott

i'm not sure for the whole shoulder (but i want to try one!)[p]boston butts take roughly 2 hours per pound of the largest one in a multiple cook. (at 250 dome, indirect)[p]14 hours for these four 7 pound butts

BamaEGG,[p]In barbecue circles, rules of thumb are just that. Something to use as a guide for the average time on the average cook. Considering barbecue temperatures, a 16 pound "whole shoulder" cooks faster than the 1.5/2 hr per pound rule, and a 3 pound pound butt takes more time. The temperature of your cooker is the largest variable when applying the "rules".[p]For multiples, guesstimated cook time is based on individual weight.[p]~thirdeye~

Tell me about it. 171 degrees now. I wonder if I put the guru in ramp mode now it will hold and not dry out for a 0430 wake up. Will it dry out if it finishes at midnight and sits for 4 hours?

i don't know, mon![p]it's done when it's done. some butts will pull at 185, some won't, or so i've heard. if you overcook it, some of it might be "mushy".[p]when it hits 185, wiggle the bone, and if it want's to come out cleanly, it's done

I had that happen to the previous 2 butts I cooked prior to this weekend. Kind of weird. This weekends were fine and only one plateau.

I've had it happen on multiple butts. Don't know why.
I've had one stay at 164 for 2 hours and then 183 for 4 hours. Damn 12Lb'r took 24 hours.[p]Mike

A 16 lb shoulder should take around 16 to 18 hrs at 225 deg *steady* grate temp.
