Can I stack two 8 lbs briskets

I need to smoke two 8 lbs briskets for Christmas Office Luncheon. The surface area of these briskets far exceed the area of my large BGE grate.Can I stack them? How do I position the fat side of each brisket? How much more time will it take over just One brisket? Thank you for your help.[p]Dutch.

As long as there is some good airspace between the two, as on an elevated second grate, it should not be a problem, and should not significantly add to your cooking time. Fat up on both of em.
