<p />Just after they came off the cooker.[p][p]Another shot.[p]These things are great! I would have never known about these cuts had it not been for the forum. They're a bit like the fajita meat I buy, but the flavor is excellent. I'd recommend these to anyone looking for an alternative cut to the ribeye or strip steaks.Comments

What are flat iron steaks?[p]I know about flank steaks and (bad) ribeyes, t-bones, ks strips, porters.... but what are Flat Irons?

Jeeves,[p]It is a chuck steak of sorts...tastes a bit like a flank, but with a better texture. Ask Mark the butcher at HEB to cut you some...he and Eric knew exactly what I was talking about when I asked them. Even the label printed out as a Flat Iron.[p]

Beanie-Bean,[p]Here is a link to instructions on how to carve your own flat iron steaks from Boneless Beef Chuck Top Blade Roasts. I have not tried this yet but have tried flat iron steaks on the egg and they are great.[p]Cheers!
