<p />A few weeks ago I had ribs at 2 of the famous rib places in Memphis - tonight I took the taste test and made my Memphis Style Ribs.[p]Rbs are always a matter of taste, but I really think that mine taste better. Not bad color for dry ribs - no BBQ sauce until they hit the table![p]Life is Good! :~}[p]

You're not alone. Kathy and I were in Memphis a few months ago and had ribs at the "best ribs" restaurants. We do much better at home.

JJ,[p]I too was curious to hear about GFW's trip. Once or twice I've splurged and ordered Rendezvous' ribs for Superbowl parties and such - before I got the BGE. Now most of the time my own stuff beats out what I had from Rendezvous. What I'd really like to do is go to that Memphis BBQ festival.

Gfw,[p]They look great, I think I'll try that rub.[p]I went to your site and read your section on beef ribs. I've been struggling with beef ribs, like you I prefer baby backs but I have an endless supply of free beef ribs from my sister's ranch. Have you done anymore tweaking with these and what have you learned? Also, what is the best finished temperature? Should I treat them like brisket by slow cooking the hell out them and get them to 200? The two times I tried doing them they came out tough.[p]Thank you,[p]CC
