baking salmon on parchment paper on stone???

<p />My large egg is stabilizing at 350 right now.[p]I plan to cook salmon fillets and baste with fresh apricot puree.[p]I am planning to use parchment paper on top of the pizza stone on the exended grate.[p]Should I put the stone in now to preheat or just add it cold with the papper/salmon already on top?[p]Thanks.[p]ShellyComments

Put the stone in now and let it come up to temp. along with the egg.....

That's what I thought but just wanted to check. I've never used parchment paper to bake fish but I thought it would allow for the apricot to bake along with the fish.[p]Thanks a lot.[p]Shelly

Instead of just laying the filet on the paper...fold it over and crimp the edges. That will seal in the steam and the flavors. Parchment will blow up like a bag...put the bag on the plate and open with a knife just as you serve. Classic way to do fish.

I added the pizza stone and got the temp up to 400 for the cook. Took about another 15 minutes.[p]Came out great, with slight smoke flavor.[p]The onions are for tomorrow's pear salsa to go with red snapper.[p]Once I took off the salmon, I removed the pizza stone with tongs, pput drip pan under the extended grate and finishing off the onions plus added a fattie just because.[p]Shelly[p]
