Mad Max-Hanger Steak Question

Max,[p]I have Bourdain's hanger steak recipe. I've looked over your suggestions and I have a quick question: What internal temperature do you shoot for in the steak? I know dome temp is 500 degrees but I am trying to gauge at what temp I should take it off.[p]Thanks,[p]Tom
