Turning a BBQ rub into a paste....

I was watching a BBQ show on tv this past weekend. It was the Diners, Drive-in's and Dives show...[p]They had a BBQ restaurant on the show. He specialized in ribs. When showing his techniques, he took a traditional dry rub and mixed it with worcheshire sauce in order to create more of a paste. [p]He then applies the paste directly to the ribs as opposed to mustard. He said that the paste makes a better bark than a dry rub. [p]I am going to try it but was wondering if anyone else had used that technique. [p]Thanks,

Big Hairy Dawg,[p]You can also take any dry rub and add EVOO for the same effect [but with a different flavor, of course!].[p]

I've done this with honey and water. It works pretty well.

Big Hairy Dawg,[p]For awhile I was mixing just enough mustard with rub to form a paste that was thick enough that I could mush it onto ribs with my fingers, sort of like clay. The flavor was really strong, but didn't have the crustiness I was looking for.[p]gdenby

How about adding a little Asian flavor with that honey or sugar?Soy,hosin.oyster,or teriyaki sauce.

They did this on last nights Bobby Flay Throwdown Show. He went up against a big Rib Guy in Texas I think. His theory was that it starts getting into the meat quicker which made sense to me. He cooked for 1.5 hrs on the smoker then transfered to the grill where he brushed on a couple more layers of pasty rub which developed a crust. I didn't get to see who won the throwdown but it looked like the rib guy would be real hard to beat.

Carolina Wizard,[p]Bobby doesn't win very many of these. He always does something very different from what is traditional, the judges come in and say "Its good, it's just not so and so." Bobby didn't even smoke the ribs, oven before the show then threw them on a Weber at the event.
