so... a special dinner?

Had an occasion to make a very special dinner last night.[p]
started by getting a 4# local wild steelhead (sorry, didn't catch it myself, but fresh), and cut only the best 3 steaks out of it...[p]
then adding 2 - 16ounce prime ribeye 1"+ thick steaks,[p]and doing the egg sear/rest/warm thing...
to perfection...[p][p]which was about as good as I've ever had, in or going out...[p]and then, to top it off, I added[p][p]a 1964 Reserva Barolo... which turned out to be the perfect compliment to prime steaks and very select fish.[p]I have, honestly, never experienced as good a home-cooked meal or enjoyed a 'surf&turf' combination as much as I did this.[p][p]SO.... what the heck makes it worth all that???[p]
how about (drum roll please) my own retirement after 31.5 years at the same company.[p]
be well, do good, best luck, ... dang! ...

I am impressed someone can retire at 57 years young ;=) You da man! Seriously, looking at 2 children under 3 and a 30 year home mortgage. I hope to retire when I am 65.

but... I've been saving for their college funds for years,
and my wife just went back to work, and I paid off the mortgage early, so it's my turn now.[p]It's not going to be easy, and I expect I'll do some work consulting, but not full time anymore, thanks
(unless someone offers a really sweet deal). [p]I've got other priorities for awhile. Like, ME [p]keep your eye on the prize!

I'm just curious about the Nebiolo...[p]Have you had it in your cellar for over 40+ years, and thus targeted for such a special occasion?[p]Do you keep fine wine like that all the time?[p]and last...why didn't I get invited?[p]Congratulations on your retirement. Have you been saving the 1964 Reserva Barolo or was it celebration purchase?

thanks.[p]The Barolo has been in my celler since 1976 when I bought it.
The only other occasion I could think of to use it for was a golden anniversary, and I'd have to be 93 to see that one [p]HS

HolySmokes,[p]Congrats on your retirement! 31+ years at the same company! wow. Seems it does not work that way for my generation. My tenures are 6 mo, 6 years, and now 3.5 years. Lets see, that means I only have 31 more years to retirement! At least my BGE will still be under warranty!
