Apple Juice...Apple Cider...The Difference?

I have also read that there needs to be a mixture of apple juice and apple cider . . .what is the difference of these two liquids? And should apple vinegar ever be used?

  • Eggmeister,[p] Apple Juice is a purified version of Apple Cider. Apple Cider Vinegar is VINEGAR!![p]The three liquids have difference flavor profiles and should be used as a recipe calls for them. While you could substitute juice for cider you can not substitute either for the vinegar.[p]

    Eggmeister,[p]You absolutely can use apple cider vinegar. Especially in certain BBQ sauces. However, keep it away from aluminum because of possible negative interactions.

Though I will admit, that on my first (and only)two rib cooks, I spritzed with an apple juice/apple vindegar mixture (because I didn't know better). The ribs were good, but I can't way to cook them correctly without the vinegar mixture. Thanks again for helping a newbie out!

  • BYC,[p] You can't use vinegar where ciderjuice is called for. You can't use CiderJuice where Vinegar is called for.[p] Well you can but it will definitely not taste the same.

    They're all different as others have said. But a lot of us use apple cider vinegar. I use a 50-50 mixture of apple juice and apple cider vinegar for spritzing. A lot of sauces also call for it.

    Just did a competition this weekend and used about a 80/20 mixture juice (80%). I liked the way my ribs came out but too many variables to tell if tat was the difference but they were very tender.
