I am new to slo-n-low and I have had 2 4.5lb butts on for 7hrs 15min, I am using a Maverick ET73 on a large egg. So my question is my temp b4 was 195f on one so I checked the other and it was the same I let it go to 200f and pulled them off i checked it in a couple of spots and got readings as low as 174 so I put them back on. For over an hour now they have not moved temp wise. Should I take them off or leave them on because the bone is sticking out. Thanks in advance for any advice

you will get different temps in different locations, but I always go by when the bone is sticking out or you can almost pull it out. I would pull em, wrap em, and place em in a cooler with towels over em for about an hour or two. Keep smokin, Dana

Joe,[p]anytime! I find that when my temp in the thickest part of the butt is 195-200 I pull them off, wrap with heavy duty foil, wrap with towels and put in a cooler for and hour or two and up to 4hrs. I always get great results with this method. Good luck and keep smokin, Dana
