A long time ago I was in Las Vegas selling at a fair.[p]A guy from Texas was offering some Red Beans & Rice. This seemed to be simple. White rice, some sausage and beans. There was some type of liquid but it was great eatin. The liqud soaked into the rice and the combination was great.[p]Since that time I have tried most recipes I could get my hands on but could never come close to what was offered.[p]This is a great comfort food and if anyone has something that is good I would sure appreciate trying the recipe.[p]Many thanks, Kent

Along with Satchmo, I also think RB&R is food of the gods. I have yet to find a really GOOD recipe. If your friend's is good, see if he will divulge it.[p]

Grandpas Grub,[p]Were I not born in Boston, I'd recommend beans from my friend in Indianapolis, N.K.Hurst. Great product! Their factory faces the new Colts stadium (although, having lived in Baltimore in the 60s, that team is anathema to me.)

Zatarain's Red Beans and Rice from New Orlean's in a package. Grill some smoked sausage on the Egg, fix RB&R per package instructions add shrimp if desired, serve sausge sliced over rice, big glass of CAB, home free.....

Here is the recipe that I am parital too.

Here a couple of modifications that I have made over the years.[p]After everything comes to a boil, I transfer the Dutch oven to my Medium BGE and place it on an inverted plate setter with kiln post. I put a chunk of pecan and red oak on the fire. I stabilized the temperature at 275.[p]I let it cook for about two hours and then cooking the rice on the stovetop.[p]Hope this helps,
