Mike I have my father in law now living with us and he likes his ribs more following off the bone since it's easier for him to chew. Can this be done at the end of your recipe ? If so what might I do to get it done?

If you wrap them in foil. Cook them say 3 hours indirect and foil for about 2 hours. [p]There are methods out there where you foil ribs to shorten the cooking time. If you extend the foil period you'll get a fall off the bone rib.

And that's in the foil indirect for 2+ hours, right?

Something like that. Foiling steams the ribs. Go too long and they will be fall off the bone. I normally foil for 30 minutes sometimes I'll foil a bit longer but I'm not trying to get them fall off the bone just softening them up a bit.
