Crown Roast???

Does anyone have a recipe for the Crown Roast that's shown in the Eggtoberfest pictures? Sure looks interesting. Any comments on how it tastes would also be appreciated.

Big Daddy,
I know this is a beast that your butcher needs to prepare. Other than that, I don't know much about prparing it.[p]Yet I did get to help cut the thing up for serving, and kept nibbling cuz it was so good. It tastes yummy! I think it is a pork loin attached to ribs, which are wrapped around it. The fat from the ribs renders and keeps the loin moist, and adds flavor. The stuffing of sausage in the top also helps flavor the meat. The caramelized crust was my favorite part![p]HTH

Big Daddy,
A Crown roast is made out of a bone in pork loin.My meat cutter at Winn-Dixie takes a 8 or 9 pound loin,cuts one inch slits in between each bone and then rolls it in a circle and ties it with butchers twine.I stuff it with one pound of sausage with sage,paint it with yellow mustard and sprinkle the roast with salt and pepper.[p]Cooking[p]I place the roast on a rack over a drip pan and cook at 350 degrees until internal temp reaches 150 degrees. I take it off,let it rest for 15 minutes and then I talked Run&Jerk and Nature Boy into cutting it up.

Thanks for the follow up! I still have one question. The top or chimney like portion of the roast, is that the part that's sausage stuffed and is it made up of the end of the bones?
