Quick question on ribs

Hi, all - hope this question didn't get posted twice, but I didn't see it after the first try (maybe cuz I forgot to put a subject?).
Any way, I just put on my third attempt at ribs, the others weren't too bad, but I'm trying for better. I'm mainly folloing The Stormy Dog's recent advice for timing, 3 hrs at 250, foil with beer and apple juice for 1 hr 15 min., the unfoil and finish for another 45 min. to 1 hr. I've got the plate setter inverted with a drip pan on the bottom, then my normal grill on top, no rib rack. My question is, is that set-up ok, or should I have my extended rack on top? Also, for the last 45 min. should they still be indirect, or direct?

Personely I dont like to foil my ribs, makes them to mushy, no texture. I like to cook at 250 for four hrs, then brush lightly with sauce and put them over a hot grill direct to carmelize them. But your setup should be fine, that is the setup I use with the exception of using a rib rack.[p]

I am by no means one to give information, as I just pulled off my first 3 racks of ribs (Car Wash Mikes' receipt). They were GREAT.
The last hour, I took mine out of the rack and put them flat on the grill, then kicked the heat up to 270° for an hour after swabbing them down with sauce. Indirect heat.
