indirect with maple chips, about 280-300 degrees for an hour. could have done them longer and put the provolone on at the end. the neighbors liked them, but something was missing... maybe panko bread crumbs

Maybe try a cheese that's a little more "salty"... like parmesan, asiago, fontina... the "quattro fromaggio" from Trader Joe's has parm, fontina, provolone and asiago...still mild tasting, but adds great "body" to the flavor!
