boat eggs with smoked fattie
Options
1 can chopped green chilies
2-3 tablespoons butter
1 package hash browns, bob evans
8-10 eggs
2 cups shredded cheese[p]brown sausage (or add smoked fattie slices and break up and heat) in cast iron skillet direct at 300.
add chilies and stir
add hash browns and butter and toss
cook till hash browns just start to turn brown on the bottom, then toss and flip and cook some more. maybe 20-30 minutes total.
add eggs and fold in while breaking yolks.
cook till eggs are no longer runny, maybe 20 minutes.
add cheese evenly over top.
when cheese melts, take off heat and let rest for about 10 minutes.
serve with can-o-biscuits baked on the egg[p][p]
cheese, glorious cheese![p]

well... hungry man ain't boat eggs. my sous chef makes hoo hash and that ain't boat eggs either.[p]both of those have bacon in addition to the sausage among other things.[p]this came from the x originally and she probably stole it from somewhere else. so you can refer to it as Rick's Tropical Delight's X's Stolen Boat Eggs if you want.

I have never used hash browns. Used croutons. Added mushrooms and worechestershire sauce. Looks good mon.

Similar dish, but brown sausage, then when it is done, throw in some eggs and hashbrowns, top with cheese and put into a warm tortilla.

i think the x called it boat eggs cause she made it at the houseboat on cumberland lake all the time.[p]it's meant to be simple and tasty with few ingredients. if you throw anything else in, like onion or green pepper or bacon or mushrooms... it ain't boat eggs.[p]technically, these ain't boat eggs either cause of the smoked fattie, but it sure does make it taste good!
