slicing brisket

thanks to all those who help last Monday with "guaranteed tender brisket". now my question has to do with the easiest way to slice a brisket. we used an electric knife against the grain. the hard slicing part was going throught the bark which was somewhat "tough". any suggestions? thanks.

    A good sharp knife is preferable to the electric ones IMHO. You did right cutting against the grain...

    otis,[p] Yeah, cutting through the bark can be a bit tough. I agree that the electric knife is a bad idea -- you end up shredding the meat! If I were you, I'd get a good slicing knife with a "granton" or "kullenschliff" blade. These blades have oval depressions ground in them to help the knife slide through the meat easier . . .[p]MikeO
