Grilled Peaches with Blue Cheese
4 large peaches, firm but ripe halved and pitted
2 Tablespoons butter, melted
2 Tablespoons blue cheese crumbled
2 teaspoons honey warmed
Preheat grill on high (or equivalent). Brush cut side of peaches with
butter. Place on grill cut side down. Grill until golden brown and caramelized,
about 2 minutes. Turn over and continue grilling until almost soft. Put peach
halves on a platter, cut side up, place a teasooon of blue cheese in the center
of each and drizzle with honey.
Serves 8.[p]

Grilled Peaches with a Chunk of Bittersweet Chocolate and Vanilla
Bean Ice Cream[p]Ingredients[p] 2 tablespoons Butter -- melted
6 ripe Peaches -- halved and pitted
6 1/2 ounces Bittersweet chocolate -- broken into 1/2oz pieces
Vanilla Bean Ice Cream -- Your favorite[p]Instructions[p]1. Wipe off the grill to make a clean surface. When the grill is
medium hot place the peaches directly on the grill, flesh side down.
Cook for 3 to 5 minutes, or until peaches begin to brown slightly.
Remove peaches and cover the grill surface with a large piece of
aluminum foil.[p]2. Return peaches to the grill, flesh side up. Place a 1/2 ounce
chunk of chocolate in the well of each peach half. Using a pastry
brush, coat the peaches with the melted butter. Cover the grill and
cook for 20 to 25 minutes, or until the peaches are soft and tender
all the way through.[p]3. To prepare in the oven: Preheat the oven to 425F. Follow the
direction in Step 2 for preparing peaches with chocolate and melted
butter, and on a a baking sheet roast the peaches for 15 to 20 minutes.[p]4. To serve, place 2 peach halves in a shallow bowl and serve with a
scoop of Vanilla Bean Ice cream.[p]Recipe Notes[p]I put my peaches on my grill pan to get the nice marks then into the
oven with the butter and chocolate. I don't roast them quite as long
as the recipe says but that will depend upon the ripeness of your
peaches.

Memphis,[p]I like to take peach halves, bananas or pineapple slices or wedges, and make a slury of butter, coconut flakes and nuts chopped medium, mix with a liquer gran marnier, amaretto orange liquer or honey and grill until fruit is soft. 300-350 direct or indirect depends on set up at the time. Serve with ice cream whipped cream or whatever the mood is. Hot chocolate is good. I leave the bananas in the skin and slice the long way. The skin when cooked is good to eat.

Glaze with balsamic syrup and then top with some high-dollar blue cheese (Stilton is exceptional).[p]Or, on the savory side, skewer them with pieces of sausage and whole jalapenos and grill.
