Pizza on the BGE
Options
I am picking up my Large BGE tomorrow! I have a friend who spent $5K to build an outdoor pizza oven based on a plan from his cousin in Italy. His pizza are excellent. In theory my BGE should equal or surpass the performance of his expensive unit. I would appreciate any comments and tips from pizza makers.

Don't make your friend mad by showing him your pizza skills for a lot less $$$$$

You know and I know you love to rub his face into it because it is the BGE and nothing else, but thats not the right thing to do. Just tell him this is your way for pizza and it comes out great. Let him wonder himself what he did wrong. [p]Pork Butt Mike

steveL,[p]Forgot to mention, DO NOT crank the BGE up over 350-400 until the gasket has a chance to get seated.. A burnt pizza can be trashed, a burnt gasket is a lot of extra work.

Practice makes perfect. Don't invite him over until you've made a few pizzas. They are easy to mess up and it will take a few tries to perfect your technique.

steveL,[p]Well there is a difference...If he built a pizza oven and did it correctly than the egg will come close...but will never replace a true pizza oven...[p]Having said that...if you practice and really start making good pizzas...than you won't have to say a word about his oven. Your egg will speak for itself.
