Just purchase a new paella pan yesterday. Looking forward to trying it out. Cruising the archives and TNW's site on dishes I have seen posted in the past.

Here is a pic of one that I did last weekend. It was my first and I followed TNW website for the recipe. It turned out great. Good luck and have fun.

I followed the Naked Whiz's paella recipe and technique, with fantastic results. However, there was one thing I will change next time. It required quite a bit of sauteing, and then reducing the "sofrito" to a paste. I used a 13.5" Stainless steel paella pan, and found that the heat from the 400º temp was being channeled around the edge of the pan, and was hitting me right in the face! I put up with it as best I could, and finished the dish, with FANTASTIC results, but my dried-out eyes bothered me the rest of the evening. Next time, I'll sautee in the kitchen, and do the rest on the egg.
Go for it... you won't be disappointed.
