I know that you must burn the VOCs off of new lump before using but how do you do that when you have a full firebox full? I'm setting up for a daylong brisket cook tomorrow and I just filled my large up with new lump (Elder Ward method of filling firebox). What happens when you slowly use up a full firebox of new lump? Does the new lump on the bottom and outsides give off VOCs as it gets ignited?

edbro,[p]You really do not need to burn off all the VOC's for just the reason you suggest. When you are doing a lo-n-slo, you are not burning all the lump. Get it started, let the smoke clear up, get the temp stable and go for it.
