Picked up 2 6 oz. boneless skinless filets. Cooked one with old bay seasoning sprinkled on and another with salt pepper and lemon juice. Sprayed extra virgin oil on so seasoning wouldn't burn. Seared the sides and cooked at 500 for 8 minutes. Best fish I ever ate. I like spicy foods so the old bay seasoning was the best for me.[p]CWM

    Car Wash Mike ,[p]Have you ever tried it at a lower temp and with say apple or other fruit wood for smoke flavor???[p]Say at 300 or so to get the smoke effect......

    Car Wash Mike,[p]I got some catfish filets from Costco and put lemon on one side and lime juice on the other, then coated with Tony Chacherie's. [p]On the grill at 200 for 25 minutes with fruit wood for smoke (we like strong smoke flavor), letting the temp up to 300 at the end of the 25 minutes stretch. Then turned them over (I have a fish basket that is great for this stuff) for about 15 minutes, then on the table.[p]Works great[p]Cajun
