Spatchcocked Chicken Success... Thanks to TNW!

Hi Eggheads,
I gave spatchcocked chicken a whirl on my large BGE. I did two 4 lb birds. I used he McCormick Montreal Chicken seasoning. Set my Egg temp 350 dome with direct set up. I didn't use a drip pan was wondering if some people do. Anyway, I got a lots of smoke during the cook but with no flare ups. I left the dome closed during the whole cook. [p]Regards, Pharmeggist

    had some trouble getting the dome up to 350, but
    the bird turned out pretty yummy.[p]Gonna try 3-1-1 ribs tomorrow...
