A buddy of mine at work told me about this today; of course I had to come home and try it. They were awesome! You can stuff with whatever you like; it's an "imagination recipe".[p]Use good quality ground chuck, use 1 beaten egg per and a couple small handfuls of bread crumbs per 3 lbs; you need this for them to hold together. Season like you like burgers, and then make 2 very thin (1/4"), uniform 6" diameter patties; then start stuffing![p]First the Pepperjack (these are on waxed paper, by the way):[p]Big_Green_Stuffed-Burgers_IMG_0660_.jpg[p]Then, the Bacon:[p]Big_Green_Stuffed-Burgers_IMG_0662_.jpg[p]Then, the Grilled Onions:[p]Big_Green_Stuffed-Burgers_IMG_0663_.jpg[p]Ready to Close:[p]Big_Green_Stuffed-Burgers_IMG_0664_.jpg[p]Closed:[p]Big_Green_Stuffed-Burgers_IMG_0665_.jpg[p]On the Egg:[p]Big_Green_Stuffed-Burgers_IMG_0681_.jpg[p]Toasted buns, anyone?[p]Big_Green_Stuffed-Burgers_IMG_0684_.jpg[p]Almost there...[p]Big_Green_Stuffed-Burgers_IMG_0687_.jpg[p]Eureka![p]Big_Green_Stuffed-Burgers_IMG_0688_.jpg[p]Burger? What burger? (buuuuurrrp!) lol...

Tony,[p]I love stuffed burgers and yours made me hungry. One thing I do is add a little beer and chopped green onion to the ground beef, then let it sit in the fridge for awhile to absorb the moisture. Regular is okay, dark beer is better.[p]~thirdeye~

Awesome idea! I haave tried stuffed burgers in the past, but rolled the stuff in. But using two halves I should have greater success.

    Smokin' Todd,
My hat's off to Kevin; all I did was listen, recall later and follow. He's a great cook.[p]I imagine these will go over big at the next "friends over backyard cookout"; I've been around for 45 years and never thought of such. A bit of trouble, but most good things in life are, eh?[p]TD

Man, you missed the best photo. You know, the one where there is a huge bite missing from the burger with pepper jack cheese and onions and bacon oozing from the middle, lol![p]TNW

    The Naked Whiz,
I had the same idea about the final "product shot" showing that mouth-watering filling.

MANNNNNN! (Many thoughts race through my mind)[p]All I could even think to add would be some sliced jalapenos, only because it's a Texas Thing.[p]Spring "Tongue Slapp'n My Brains Say'n NOW NOW" Chicken
