Ribs: 3-1-1 vs. 6 hours in a rack

I've been using the 3-1-1 method lately for baby backs and spare ribs - used the 4-6 hour on a rack method before that. Both methods have given me decent smoke penetration and moisture retention but I'm still trying to get that nice rich sticky mouthfeel and glaze to the ribs. I use a brown sugar-base rub. Have even spritzed the ribs with apple juice and used honey during the foil wrap during the 3-1-1 method to no avail. The ribs, though they still taste pretty good, have a flat, matte-like finish to them.[p]Any suggestions?

    If you use a sugar base bbq sauce. Make sure it is cold before you baste. Just sticks better.[p]Mike

    A sauce will bring a glaze to my ribs. Not as good looking as CWM's ribs....but I'm learning.

    <p />Dr Jeff,[p]I do 5+ hours...after that I pick them up to see if they want to break or come apart.[p]I make my own sauce and it has brown sugar...in it..I kind of watch the cooking time and when I think I am 30 mins out I start adding sauce..and keep an eye on them to make sure the sauce doesn't burn..[p]They look wet but if you touched them they would probably stick to your hand..!

    and very good advice that is. BluesHog becomes like very very thick glue and sticky.[p]I did a 2+1.5+30 minute cook tonight. Cooked up some ribs for our friends who has a son in the hospital. There was a ton of chicken there when I got there. Mike said I'll try a couple......then I think I'll have a couple more :>)[p]I ended up getting sent home with a dozen donuts and some of the chicken.....he had plans for those ribs LOL.

    If I cut grass on a Sunday there is some serious kink in my schedule.[p]Not good for the preacher to be cutting grass on Sunday.

    Dr Jeff,[p]Following a Dr BBQ recommendation, I mix some honey into my favorite sauce and apply the sauce during the last hour. Very good if you're looking for sticky ribs.
