What is the best tool to use to monitor the cooking temperature? If a Polder is the accepted thermometer, what model is the best to use? [p]Thanks,[p]Dean

Dean,[p]Maverick RediChek Remote Wireless Smoker Thermometer is what I like. Many of use this as well as other brands.

An indwelling thermometer of some kind is necessary, but for monitoring doneness of steaks, chicken, etc. a Thermapen (brand name) instant-read thermometer is essential. It has changed my success rate dramatically for the better. Thin items change temp. so fast toward the end of the cook, an instant-read thermo keeps me in the game.
