Black Drum

Has anyone ever cooked black drum on the egg and if so can you give me a few suggestions. Also, how does Blak Drum taste?[p]Dustin

    Dustin Kress,[p]Drumfish is very mild tasting as long as you avoid the dark strip down the center. It is not oily, has a slight flakiness when cooked, and tends to dry easily. Most halibut recipes will work well with drumfish with the understanding the drum will dry quicker. A marinade and/or sauce is a good idea for drum. A simple marinade is to use ranch dressing. Make slices 1/2 way into the meat and rub in the dressing. Marinate for 2-8 hours.[p]Cook in foil at 300-350°F until the meat just starts to flake. You can start with the foil open and lightly smoke the fish early in the cook (while the Egg is heating up). Alder and any of the fruit woods wouls be nice. Seal the foil once the smoke subsides.[p]Another possibility (for drum steaks) is to coat them with bread crumbs and bake in your Egg. Cook as above, leaving the foil open and covering the steaks with a nice italian style sauce once the fish starts to firm up.[p]Spin
