Tritip Chili

I had an a tritip that was getting to "cook or freeze" time, so I decided to maek some chili.[p]Sauteed onions and garlic with chili powder, cumin, cayenne and salt.
Added cubed tritip and browned it up.[p]chili-1.jpg[p]
Deglazed with a little Shiner (good excuse for a sip on a weeknight)[p]chili-2.jpg[p]Added Rotel, Bush beans, crushed tomatoes, tomato puree and a little grating of chocolate.[p]Off to the Egg. 300 deg with one hickory chunk. Set the pot on ceramic spacers. Wrapped the pot in foil to ease cleanup.[p]chili--3.jpg[p]BGE-Chili-007.jpg[p]Chili was good, but I wish I'd set a control bowl aside to gauge the difference the smoke made. Also used wrong Cheddar- 50% reduced fat melts into spoon and bowl coating glue.[p]chili-4.jpg[p]
