I need to cook a meatloaf on Sunday for my office lunch on Monday.
We are having pot luck meatloaf day. Several people are cooking the version they like the best. We have a theme lunch every couple months.
We have a visiting Doctor that has never experienced meatloaf so we decided to have meatloaf lunch pot luck.[p]Any hints or ideas would be great.
I would like to stuff or roll with good stuff.
My co-workers claim this can't be done on a grill.
"It will fall through the grate" they say.
I asked how a hamburger manages to hang on. "Oh, it might work".
May make two small ones with different stuff inside.[p]Thanks for the help,
Darian

Thank you,
Darian

Photo Egg,[p]overmeatloaf.jpg [p]You mean like this? Even without the cast iron it will work. I just used it cause that is the way I have always cooked meatloaf. [p]QBabe's Cherry Smoked Meatloaf[p]Ingredients:
    1 lb ground beef
    1/2 lb ground pork
    1 cup italian bread crumbs
    2/3 cup milk
    1 Clove garlic, crushed
    1 egg
1 small onion, chopped (about 1/4 cup)
    1 Tbs Worchestershire sauce
    1 1/2 tsp salt
    1/2 tsp dry mustard
1/4 tsp freshly ground black pepper
    1/4 tsp sage
3/4 tsp Dizzy Pig Cowlick Steak Rub
    Ketchup, for brushing[p]Preparation Directions:
1 Preheat cooker to 350° with indirect setup.
2 Add cherry wood (I use several large chunks).
3 Mix all ingredients together in a bowl.
4 Shape mixture into a loaf and put into an ungreased loaf pan, 9x5x3 inches.
5 Brush top with ketchup and sprinkle with more Cowlick Rub.
    Cooking Directions:
1 Once cooker is stable, place meatloaf into egg and cook for 1.5 hours until done.
2 When meatloaf is done, remove from loaf pan and let sit for 5 minutes before serving.
    Special Instructions:
1 Serve with QBabe's Goat Cheese Mashed Potatoes...

    Celtic Wolf,
Thank you for the detail and photos.
This looks great. I like the cast iron
style. I never cared for the tall slim loaf pan.
I like the scust flavor on top.
    Thanks,
    Darian

    fishlessman,
The variety of your posts are the best.
I'm sitting at my desk at work eating trail mix with no sign of lunch and you hit me with just what I was looking for. I should have waited later in the day after lunch.
    Thank you,Thank you...

  • Photo Egg,
Instead of using straight ketchup for the topping I use about 70% ketchup and 30% Heinz 57 sauce mixed together. Put on top last 15 minutes of cooking.

    Photo Egg,
if you do this one, take the chicken out, with the chicken you have to bring it up to a higher temp

    fishlessman,
    Thanks for the chicken tip.
How do you think this will reheat if I cook Sunday, slice and reheat Monday? No other choice. I live over an hour from work and clock in at 7:00am.

    Photo Egg,
Meatloaf on the Egg is one of my favorite meals. Mine is a mixture of ground beef (1.5 lb), ground pork (1 lb) and ground veal (.5 lb), rough measurements. I am sorry I don't have all of the recipe ingredients, but it includes cubes of bread soaked in milk and egg, plus sauteed onions, jalapeno, sour cream, various spices. The key for me is that I mix it the night before I am going to cook. I put it in a loaf pan and put it in the fridge over night to set up. I then take it out of the loaf pan so the fat can escape. I cook it over a drip pan on a flat fish pan (has holes in it)on a raised grate at about 350 dome. It takes a little over an hour if memory serves me right. I usually use some hickory for smoke. It is awesome and leftovers are even better.
