    eggaholic,[p]Sure looks good. I'm kind of surprised that doing it a'la TRex the string didn't burn off. Do you think the little red mark is where the thermapen let the smoke in?[p]gdenby

    One string did go up in smoke. Red mark is part of the meat thermapen was only used from top to bottom not in the side.
