Ok I've been eggen for 3 whole weeks now and I think I've done some pretty darn good vittles. Pizza, T rex (like the dinosour?) steaks, pork tenderloin (stuffed with proscuitto, basil and parm cheese) alder smoked salmon (the little mrs. favorite) and some darn good yard bird. All have been fast cooks. I'm doing an 8 lb butt this weekend. Read all the tips, got my remote dual sensor probe, got some hickory chunks and a big ol can of DP rub. I've been waiting for a long time for this one. I don't have a V rack though? How important is that?
