JQuinn,
save the Jack for your glass, iced.[p]I use apple juice/cider in the drip pan, very rarely in an injection (good ribs really don't need it).[p]I do, however, give them a good rub before we start, and begin basting on some sauce about an hour before we're done (course I
don't bother with the foil, just keep 'em indirect, moist, and cooked until the bones exposed about 1/4"). [p]Folks never complain... me included.[p]HolySmokes.

~4 parts apple juice to 1 part grade B maple syrup for a spray/1hr. I quit foiling ribs, quit saucing in the end, and quit turning as often. KISS method, I reckon, per CWM. My favorite is St. Loius cut from spares with the pieces left on for sampling. Usually goes 6-7 hours at 250F dome.[p]Best of luck.[p]ss

JQuinn,[p]I usually use one of the DP rubs. Dizzy Dust is a favorite or I'll use Swamp Venom to kick it up a bit. I've been using the sauce below for finishing ribs for the last year or so. No complaints so far...
