Giblets

OK, I'm sorry but it's in my DNA. I grew up in a family that loves giblets and we fight over them whenever turkey or chicken is served. I've always simmered or fried them but I'm wondering if anybody does them on the egg? What about beef tongue? I know, I know, but it's really good...

For years I thought modern chickens came withour giblets. I rediscovered them when I started to bbq. The tradition continues, the cook gets the giblets....tom

I agree they are good fried (Ga. boy here), but these days I tend to grind them for making a really rich brown stock. We used to fight over the "batchelor's button" (chicken tail bit) when I was a kid.

alb,[p]I like to grind giblets in with hamburger meat then when I serve them to friends, I just sit back and listen to them talk about how much flavor my burgers have!!!!
