<p />Valentine dinner was a little hotter this year. I decided to let the steaks age a little longer.

Lady in the Shoe,[p]These 4 chiles were made with the following but the amounts and ratios vary everytime I make them. Sometimes I like them cheesy sometimes meaty.
1/2 lb sausage
2 scallions
8 musrhooms
4 oz. cream cheese
4-6 oz mozarella
coating:
4 egg whites beaten to stiff
4 egg yolks and 4 tbsp. flour mixed and then mixed into stiff whites.[p]cook the Chiles at 350-400* about 20 minutes prior to pour egg mixture over them. cook till firm and golden
