1 Tbs of finely minced garlic
1 Tbs of dried marjoram
1 Tbs of dried ground rosemary
2 tsp of kosher salt
1/2 tsp of freshly ground black pepper[p]Process the onion in a food processer then strain in cheese cloth. Get all the juice out you can.[p]Add onion lamb and spices in a mixing bowl. I use the KA and let it run for about 5 to 10 minutes. It will turn into a pate.[p]Form and let it set for a few hours or overnight. Then cook on the egg till at 325 degrees. It is done when the mixture reaches 165 to 170 degrees. About 75 minutes. Remove the foil with about 15 min left so that the outer layer will brown and crisp up. [p]I marinate my onions and tomatoes in a vinegar, oil, water and oregano mix over night. This makes it especially delicious!!![p]Serve with your favorite tzatziki sauce (let me know if you want me to post mine, onions, tomatoes, and feta cheese.[p]Also, I like to brush my pita bread with olive oil and bake in a pan for a few minutes to warm them up and make them slightly crispy.
