Someone posted that they boil the bacon before they wrap. How long do you boil it for, 3-4 minutes?

Jake,[p] I don't boil my bacon, but I stayed at a Holiday Inn Express last night.[p] 2-3 minutes is what I believe I read!!

Jake,[p]That's about right. I boil it until it floats, about 2 to 4 min. If you do boil, do not over do it! The bacon will become too stiff to easily wrap around the pepper. I usually get away without having to use a toothpick.[p]

Jake,[p]Well, I try to separate into strips without tearing them up. Sometimes it's not that easy so I separate them with a little stirring when in the water.

LolaNuggs,[p] Basically it starts rendering the fat so that it will crisp up quicker.

Let your bacon set out 30-45 minutes before wrapping. This will soften the bacon up making it eaiser to work with. Wrap a half slice around each ABT. Cook these INDIRECT at 400-425 on a raised grid. No need to boil bacon. As you can see they turn out perfect. If you want to precook bacon 30-45 seconds in the microwave will do the trick.[p]Mike

Celtic Wolf,[p]Yep, noticed that right off. Do you usually go without a drip pan for ABT's? I use a sheet of HD foil to catch the drippings.

BabyBoomBBQ ,[p] I was bringing them to work yesterday for a "tailgate" part, so there are more in there then usual. But I don't usually use a drip pan or foil.[p] Humpty will be going into self-clean mode soon. After that I'll cool him down and I am either going to cook a tri-tip or a leg of lamb. The Ruler of the Rooster demanded I use up what was in the freezer.

I'm not a big fan of the pepper that is why I use half. That and you can serve twice as many with the same amount of prep time.[p]Mike

we've made them both ways... it's all up to the cook and how far you need to stretch the peppers.[p]a couple of times we used a quarter of a precooked italian sausage to "cap" the pepper boat. other times we use both halves of the pepper and put diced sausage in the cream cheese filling...[p]this photo was the first time we made them.[p]of greater concern is WEAR GLOVES and EYE PROTECTION during pepper cleaning or you'll be sorry.[p]
