Got a couple of slabs of beef ribs. Never tried before. Cook like pork? Maybe 3-1-1? They seem to have a lot of fat.

smokinsop,[p]I did some 3-2-1 last week- good but fatty. I will try 6-7 hours indirect @ 225 ish next time.[p]BigT

smokinsop,
I do them indirect at 250* for about 6-7 hours. No foil, no flipping needed, IMO.[p]I love them!!!! Use guava wood if you have it. If they are too tough, you did not cook them long enough.

Cook them like wardster said. They will be perfect and like he said, if they are tough, cook them more. PopsicleWillis Tx.
