11 pound brisket, 240 grid, how long do you think?

First whole, packer, brisket going on later this evening, weighs 11 pounds and change as is. First cook with my Guru also so I am thinking I can definately keep the grid temp at 240. Done alot of research and I cant find an estimated "hours per pound" estimate of how long this baby will take to be juicy and tender. Plus or minus some is good, not sure at this point if its 12 hours or 22 til she's done? Man, I can already taste it!! Hopefully get some pics of the process also.

    orion11,[p] As long as you keep the grate temp at 240 it will that 1.5 to 2.5 hours per pound depending on the amount of fat and connective tissue.

    Heck, I don't know. I've been putting the fat cap down and bacon on top for some time now. It does OK, but brisket is not my best cook. The one in that picture was probably one of my best. A good friend that is a better cook than I told me to put a duck on top of the brisket. He says that's what his dad did to keep brisket moist. Ever know anyone to do that? [p]Tomorrow, I'll be doing some jerky. Thanks for your pointers on my nemesis. I'll post some pics on how the little morsels are coming along.     Whooooaaaah, fella. No gluttony in that picture. There were 25 people peckin on dem carcasses. Now this one, this dry aged rib roast...this was gluttony...[p]dryaged.jpg[p]Mmmmmmdrrrrrrooooolllllmmmmmm
